Cauliflower Tabbouleh

A paleo twist on the traditional tabbouleh.

 ½ Cauliflower Head
 1 Garlic Clove
 1 Parsley Bunch (finely chopped)
 1 tbsp Chopped Mint
 2 tbsp Olive Oil
 1 Tomato (diced)
 1 Lemon (juiced)
 Sea Salt and Fresh Ground Pepper (to taste)

Put the cauliflower in a food processor with the garlic. Chop until cauliflower is finely chopped.

Transfer to a bowl and add the remaining ingredients. Mix until well combined. Chill until ready to serve.
